With the introduction of the “2stone Commercial oven” we are happy to announce a “true breakthrough” in high temperature commercial pizza baking.
The patented 2stone uses an open door draft system, where the hot air and flames are pulled through two closely spaced stones. The bottom hearth stone sits on a pocket of hot air and turns at a slow even pace, enabling the pizza to rotate on its own axis for even controlled baking.
The top of the 2stone uses our “turbo top” design of layered stones and aluminum creating an incredibly efficient heat sink.
As the hot air is pulled over the rotating pizza, the moisture from the wet dough, sauce, toppings and cheese is constantly discharged through the front. This produces a dryer crisper bake, allowing the 2stone to bake with little or no recovery time, for blistering fast production.
With the open door design, loading and unloading the pizza is easy, and you have a full close-up view of the entire baking process for complete control.
Measuring in at only 18” wide, 26” deep and 59” high, and weighing approximately 250 lbs, the 2stone is designed to be used as a stand alone unit or in a series. With a series of 4 ovens, a production rate of 120 + pies an hour is easily attainable. With a 2 minute bake time the crust comes out both crisp and light. Serve pies in less than 3 minutes from when the order is taken.
The 2stone warms up in less than 15 minutes and can go from idling to full throttle in less than 5 minutes, giving you better control of fuel consumption.
Dual burner controls allow you to dial in top vs. bottom temperatures with the ability to give sudden heat bursts if needed. Bake 12” pies directly on the stone hearth or 14” pies with the use of a screen.
The 2stone stainless steel oven comes equipped with a commercial burner chassis for indoor use under a typical hood. It is easy to set up and will run on either LP or natural gas depending on your needs. NSF certified.
